Definitely one of my favorites. I like mine a little on the sweeter side (as I’m sure you’re not surprised), and somewhere between a bread and a cake consistency. I guess it’s not totally traditional Southern Cornbread – but I do use buttermilk and an iron skillet! The kids love it too, so it makes for a good breakfast option when we’ve had our fill of eggs, cereal, oatmeal and pancakes. Can’t go wrong with a piece of warm cornbread and a pat of butter….or some blackberry jam. Sooo good.
