Easter Dessert Table

I did a ton of baking for Easter this year as we had a pretty big bash to celebrate the holiday.  It turned out to be a beautiful day and a great time was had by all!  Take a peek at what was on the dessert menu:

Carrot cake, with cream cheese buttercream, topped with a bunny-shaped butter cookie;

Flower pot cookie cupcakes (they were pound cake cupcakes with vanilla buttercream);

Our signature butter cookies shaped as Easter eggs, bunnies and flowers;

Mini cheesecakes;

Mini Key Lim Pies (they’re in the back there…didn’t get a great shot of them); and,

Mini caramel-filled brownies topped with chocolate buttercream.

Strawberry Buttercrumb Bites

These little numbers are probably what started my baking obsession. Every year at Christmas, my mom’s friend, Betty, would bake dozens and dozens and dozens of cookies – and we were the lucky recipients of a huge tin each holiday. Strawberry Squares were ALWAYS included and they were my favorite!

These Strawberry Buttercrumb Bites are my interpretation of that holiday memory. I tweaked the recipe and fancied up the name a bit, but they are still the same delicious little treats. I’ve made them with raspberry and blackberry preserves too – and they are just as yummy! A perfect addition to a breakfast or brunch menu!

Chocolate Covered Strawberry Cupcakes

We got an order for a variety of mini chocolate desserts and we wanted to whip up some new flavors.  This was one of them!  Chocolate cake topped with strawberry buttercream and a slice of fresh strawberry.  Let me tell you – they came out delicious and tasted just like a chocolate covered strawberry!  This flavor is going on the menu!
